7-22-09 Garlic & Tomato Salad

One of the dishes that always reminds me of my mom and simultaneously summer time is a simple garlic and tomato salad my mom makes. It's so simple which is probably why it's so delicious. Simply chop up some (preferably freshly grown) tomatoes, mince some garlic, give it a healthy pour of olive oil and a dose of salt. Let it all sit together on the counter for 45 minutes to an hour and be sure you are well-stocked with fresh bread and butter for dipping. Thanks Mom!

(These were store-bought Tennessee grown tomatoes. They tasted pretty good but still do not have any tomatoes from my garden. ::is sad::)

  1. I dreamt last night that the cherry tomatoes were growing UNDER the soil instead of off the vine above the soil. This would have been AWESOME, because it might have meant that my tomato plant might be working out after all. But I woke up and I still had a wilty brownish tomato plant with no fruit on it. BUMMER! Better luck next plant, I think.

  2. i went and looked at my tomato plant yesterday that is GIANT and it has NO tomatos. Isn't that weird? BUT, i have one watermelon.

    Better luck next year.

    I too made a tomato salad. Mine was cucumbers and tomatos with italian dressing. Like you, it reminds me of my mom and summers bounty!
