10-8-09 Buttermilk Pie

I baked pie to help a friend celebrate her birthday. The consistency of a pie is something like a custard pie, only it has a sweet tang from the vanilla and lemon extracts. The picture quality is not excellent - I was in the car rushing to get to her place and let the fun (and pie eating) begin!



I am pretty sure she won't mind if I share the recipe:

3 eggs
1 c sugar
2 T flour
1/2 c melted butter
1 t vanilla extract
1/2 t lemon extract
1 c buttermilk

Beat eggs slightly
Add sugar and flour
Add butter, mix well
Add buttermilk and extracts
Pour into pie shell
Bake at 325 degrees F until custard is set (abt 45 minutes)
